Hartshorn Distillery is a new Tasmania micro-distillery that makes vodka and gin from sheep whey. Most of the whey from cheese making is thrown away, but this unique product, for the first time in the world, developed a technology which extracts sugars contained in the whey to ferment alcohol. Apart from the distingtive taste, all bottles and labels are hand-painted in one of Australia's smallest distilleries producing small batches of 80 bottles at a time using a dedicated 200 L glass column. The bottle itself is also excellent in design. Winning the World Vodka Awards 2017 in London, the Australian Beverage of the Year award the same year, and the app site famous amonst Gin drinkers, “Ginventory”, rated Hartshorn 9.5 out of 10.

Although Tasmania has the ideal environment for making great malt whiskey, it has been 150 years since the last licensed Tasmania distillery closed down. Lark Distillery founder, Bill Lark, realized that Tasmania still had a perfect whiskey environment, and decided to create his favorite malt whiskey. Lark Distillery is now Australia's leading distillery producing one of the highest quality premium spirits in the world using only the traditional way. The distillery still uses a 500 liter still and 1800 liter copper pots. Award-winning, founder Bill Lark is now in the Whiskey Hall of Fame for his contirbution to the whiskey industry.

Belgrove is one of the world's few unique distillerys where everything from crop growing, harvest, fermentation, and distillery is all done in-house. Belgrove is also the Australia's first Rye Whisky distillery. In addition, the facility uses biodiesel power generators for production and work on environmental protection as well as sustainbility. Each bottle is bottled by hand and their quality is highly acclaimed around the world by many well known critics.
